Chapter 1 - Low Fat Foods and Dieting are Making Us Fat!
|
People
are getting exciting results with weight loss and general health
improvement by adding coconut oil to their diets. There are several
popular books on coconut diets and coconut oil right now. There
is a list of some of them in our Resources Appendix, if you are
interested, but the basic diet secrets of coconut are the same.
It seems we have just discovered something that was lost to several
generations of people growing up in the United States. Coconut
oil was prevalent in the early 1900’s, but it has disappeared almost
entirely from our diet since then, and we are certainly not any
healthier for it.
Coconut oil has been credited with helping people lose weight, as well
as helping people with immune function disorders, diabetes, heart
disease, cancer, and much more. The tropical people who ate lots
of coconuts had very few health
problems, until we taught them that it
was a “bad saturated fat.”
One of the reasons that coconut oil has been ignored is because it has
a very high percentage of saturated fat. Before you throw this book
away, and never touch a coconut, be open to some information that may
go against what you have been taught and believe. It may very
well go against what your doctor or nutritionist have been taught to
believe.
Saturated fat can be good for you! Much of today’s Standard
American Diet (or SAD) is based on the faulty idea that saturated fat
is bad for you and replacing saturated fat with “heart healthy”
vegetable oils is better. Yet since Americans have lived with a diet of
low saturated fat, all we have done is become unhealthier, and our
illnesses and obesity rates are at an all time high.
I know that my family did not ignore the advice of health
authorities. We ate lean meat. We cut out butter, cheese,
lard, and nuts and switched to margarine, shortening and vegetable
oils. We added fiber to our diets. And we continued to gain weight, so
we went on low calorie diets. And still we gained more weight and
developed illnesses such as strokes, heart disease, cancer and
diabetes. I know it is not just my family. The rate of obesity and
illness had risen sharply in America in the last 60 years. What
went wrong?
To begin with, dieting does not work. Fad diets, which include strict
low calorie diets and quick weight loss diets, help us initially to
lose weight by burning muscle and dumping water. But once the body
understands that it is being starved, it starts hoarding fat, and you
start craving it. Suddenly you start binging on the wrong kinds of
fats, like French fries, donuts and potato chips. You can’t help it.
It is your body’s natural defense mechanism to keep you from starving.
So as you binge, you break the low calorie diet and start to gain
weight. In the end, you weigh more than when you started the diet. This
is called the yo-yo diet cycle.
Low-fat diets are usually very low on the protein we need to build
muscles. This is why so many people on low-fat diets find it so hard to
lose weight and build muscle. They also become tired very easily.
Low-fat diets also keep you feeling hungry, which is another reason
low-fat dieters over-eat. Low-fat diets are usually high carbohydrate
diets. We need good complex carbohydrates in our diet, but without
healthy fats, you will lack energy, have a lower metabolism, and still
get fat. Good fats in our diet help control and regulate our appetite,
so we feel satisfied and don’t over-eat. (For more information on

By now several generations of people have been taught that the way to
fight obesity and disease is to cut saturated fats (or all fats) from
our diets. And each succeeding generation seems to have more illnesses
and physical problems than the last.
As we teach people all over the world to abandon their traditional diet
for a “healthier” more American diet, they are developing the many
modern health problems that we face.
